Bikini Recipe

Yields 10 servings

To make the Clementine Cordial (produces 750ml)

300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g fine sugar

To make the Premix (yields 850ml, serving 10)

400ml good quality vodka
100ml dry gin
150ml peach liqueur
200ml citrus syrup (see above)
Whole cranberries, for garnish
Mandarin essential oil, as a final touch

Method

Making the Cordial: Put every items inside a saucepan, heat until it reaches a simmer, mixing to dissolve. After that, take off the heat and leave to cool fully. Pour to a sealable bottle, cap it and refrigerate it in the fridge, where it will keep for around a month.

For the Premix: Pour all the liquids into one big jug, let it rest for an hour, then filter it , ideally through cheesecloth, to ensure it's perfectly clear.

When ready to serve: Add 85ml of your cocktail base to a mixing glass packed with ice, and agitate carefully for a minute until cold. Strain to a frosted cocktail glass or similar, garnish with some cranberries adding the final touch by giving it a light spray with the mandarin essence over the drink.
